To judge the competition, we invited Sarah Woodfine, pastry chef at Le Patisserie at Troquet (140 Boylston St.) to join us. Woodfine, a native of Niagara Falls, Canada, studied at George Brown College in Toronto, and has worked as the executive pastry chef at the renowned White Barn Inn in Kennebunkport, Maine. She describes her 12-item menu at Troquet "classical with a hint of modernity." Among some of Woodfine's creations: Strawberry rhubarb souffle, milk chocolate mille feuille, steamed lemon pudding and pistachio beignets with frozen cherry bellini.
