At first blush, the festive atmosphere at American Flatbread — a huge party with bonfires and kids running through the fields around a converted Mad River Valley farmhouse — may seem to overshadow the food. But it's really all about the pies, which are hearth-fired and piled high with local cheeses, snap-fresh organic vegetables, and free-range and grass-fed meats. The restaurant is open only Friday and Saturday nights, and it doesn't take phone reservations. So do what the locals do: Show up and put your name on the list when the place opens at 5 p.m., then wet your whistle with a pint or two by the bonfire until your number comes up.
