
Wayne Curtis, author of ''And a Bottle of Rum: A History of the New World in Ten Cocktails,'' knows his way around the bars of New Orleans. The Monkey Gland is a gin-based cocktail blended with orange juice and enlivened by grenadine and Pernod served at French 75 Bar.
MONKEY GLAND
1.5 oz dry gin
1.5 oz fresh orange juice
1 tsp grenadine
1 tsp + 1 dash pastis
Shake with ice and strain into cocktail glass.
