Rice Brazilian-style (serves 8)
3 c chicken broth
2 c water
1 t salt
3 T olive oil
1 medium onion, diced
1 clove garlic, minced
2 medium tomatoes, peeled, seeded, and chopped
2 1/2 c white rice
Mix chicken broth, water, and salt. Bring to a simmer over medium high heat. Meanwhile, heat olive oil in a large skillet over medium heat. Add onion, garlic, tomatoes, and rice. Cook, stirring often, about five minutes. Add chicken broth mixture and return to a boil. Cover and simmer over low heat about 20 minutes until liquid is absorbed.
