Fourth course: Zeppolis

3 eggs

1 pound of ricotta

2 tablespoons sugar

4 tablespoons baking powder

3 tablespoons brandy

2 teaspoon of lemon zest

1. Mix all ingredients together. Chill for 1 hour.

2. Fry mixture in vegetable oil, heated to 375 degrees, until golden. Remove and place on paper towels.

3. While still hot, sprinkle top with powdered sugar.

4. Serve with Espresso or cappuccino.
