Cutting along the top
The muscle on the top must be cut to release the oyster. The muscle can be found in the middle, and it is cut by sliding the knifes blade along the top of the shell.
The blade should run cleanly along to the right side of the shell. Cutting the bottom will cut into the oyster and mangle it, Ventura said.
The top shell can be discarded once released from the oyster.
