SCENES FROM ONCE IN VALHALLA
Cuisine en Locale, a Cambridge-based group of locavore personal chefs, hosted ONCE (One Night Culinary Event) in Valhalla on Friday night. The event allowed diners, or deceased warriors, to feast with the Norse gods and goddesses in the great hall of Valhalla. The 10-course meal was made entirely of locally produced food.
The sold-out audience dined with the gods as Valkyries served them their courses throughout the night.
Warriors (the audience) arrived to tables filled with a smorgasbord, which included Stillman Farm liverwurst, pickled R.I. herring, cured beef, rye hardtack and pickled vegetables.
The Center for the Arts at the Armory transformed into Valhalla hall, complete with banquet tables, Scandinavian music and a roasting fire.
Dan Meyers, dressed as the Norse god Oder, watched over his guests.

ONCE chefs shucked 500 Island Creek oysters for their guests. The oysters were served with Apex Orchards cider vinaigrette.
Valkyries offered mead and beer for cash sacrifices.
One diner perused the menu to find the names of the night’s theatrical staff.
Dan Sensale (left) from Slumbrew and Garth Shaneyfelt from Green River Ambrosia got into the Viking spirit as they offered samples and sales of their brewery drinks.
Even the youngest of warriors found a place to feast in Valhalla.

A group of monsters—led by Oliver Saffery, Luc Knapp (as Loki), Angela Gaimari and DJ Roman—commandeered the hall from Odin and performed “Party Viking Style.”
Becky and Sean Prior of Watertown were first-time guests to Valhalla. “Between the local food and the Vikings, what’s not to love?” Becky said. Her favorite dish was the ryeberry pilaf with Shady Oaks Organics’ mushrooms and house-made sauerkraut. She said the dish inspired her to try new meals with her grain CSA.
Warriors feasted at the long banquet tables. Many decided to sport Viking hats and horns that were available for sale.
Pamela and Robert Isaacson of Roxbury said this was their fourth ONCE. “Every ONCE is a little different,” Pamela said. “You never know what to expect.” She said her and her husband’s favorite dish was the “incredibly hearty, very complex, but not heavy” beef stew.
Janna Comeau of Revere is a ONCE warrior; Valhalla was her 20th event. “It’s great food, a great show and great camaraderie,” Comeau said. She said her favorite dish of the night was cheesy oats, made with Maine cheddar and Stillman Farm ham.
Warriors continued to eat, and drink, and eat throughout the night.
Katrina Jazayeri, Matthew Stein (as Odin), Erin Ross and Molly Traynor ended the night in good cheers. It’s hard not to in the hall of the gods.
