A new Cambridge barbecue restaurant from an award-winning pit master is set to open in Kendall Square this weekend.
Chef Andy Husbands is bringing a wide range of slow-cooked barbecue to The Smoke Shop, which is scheduled to debut at 1 Kendall Square in the old Tommy Doyle’s location on Saturday, June 25, barring any last-minute delays.
Husbands, who also runs Tremont 647 in the South End, has been part of a competitive barbecue team with fellow Boston pitmaster Chris Hart since the 1990s. The duo’s team, IQUE, has won dozens of Kansas City Barbecue Society championships, hundreds of barbecue ribbons, and in 2009 became the first team from the Northeast to ever win the Jack Daniel’s World Championship Invitational Barbecue. Husbands and Hart also recently published a recipe book called Wicked Good Barbecue and have appeared as contestants on Hell’s Kitchen and Chopped.
“I am thrilled to introduce the Smoke Shop to Boston,” Husbands said in a press release. “It has been a lifelong dream of mine to open a barbecue restaurant, and I’m very excited for guests to enjoy modern competition-style barbecue that’s enhanced with all-American hospitality. I believe everyone should be treated the way you treat your grandmother, and that’s the kind of experience you’ll be able to expect here.”
Along with a traditional spread of meats and sides, The Smoke Shop menu will feature creative dishes like brisket served with kimchi and Korean vinaigrette and a smoked fried chicken served with Thai flavors, mint, and fermented, peppery mayo. Large groups with a reservation will be able to order The Whole Hog or The Whole Brisket, giant portions of meat served with every side on the menu that will feed 10 to 12 people. Customers can enjoy treats like a four-layer brownie or Kenny’s Butter Cake if they have room for dessert.
In addition to the food, the restaurant will feature an extensive American whiskey selection, an outdoor patio, and live music Thursday through Sunday.
