Make This Tonight: Bacon, Pear, & Brie Panini

National Grilled Cheese month is well underway and while we can’t imagine you’ve grown sick of this beloved combo, I’m sure suggestions for new combinations, tips, and methods are always welcome. Personally, I happen to find the best grilled cheese happens when the bread exterior is smeared with a layer of mayo, which doesn’t have the tendency to burn like butter or oil. The results are golden, crisp, not-too-greasy toast that browns slow so the cheese can reach its full melt-potential.

This particular sandwich features that sweet-salty-savory trifecta that takes grilled cheese to the next level. The key to a stellar sophisticated grilled cheese is to use the best quality ingredients you can find: top-notch bacon, your absolute favorite bread, and brie — oh, the brie. I also happen to be very partial to delice de bourgogne, an extraordinary creamy, fatty French butter cheese that I’ve encountered at Central Bottle and (randomly) Trader Joe’s. It’s very similar to brie — as it’s reasonably priced and insanely delicious — and goes that extra mile if you’d looking to kick up the recipe below even more. Yum.


Bacon, Pear, & Brie Panini

Makes 2 sandwiches

4 Slices good quality bread

4-6 Slices Cooked Bacon

Fig Jam

A Couple Slices Of Brie


1 Pear (I used anjou)

Equipment: A skillet or panini press

Bake or pan fry bacon to desired doneness and set slices aside. Notes on how to cook bacon below.*

Cut pear into thin slices and place in a skillet/panini press and cook pear slices on each side until tender, about 1 minute.

When done, remove from pan/grill and set aside.

Butter one side of each piece of toast, and with that side facing down, spread each slice with a generous amount of fig jam.

Continue to build the sandwich by adding cooked pears, a few slices of brie cheese, and 2-3 strips of cooked bacon.

Place sandwich on grill/panini press, and grill until warm and golden and cheese is melted. Cut and enjoy!
