More than two years after it was first announced, chef Will Gilson’s multi-concept venue The Lexington will finally open its third and final puzzle piece: Geppetto is set to debut in early October, preceded by sister restaurants Café Beatrice and The Lexington.

The modern Italian restaurant will open with dinner service, focusing on handmade pastas crafted by chef Tony Susi (Capo, Olives, Sage). On the menu: Beet cavatelli with corned brisket, carrot spaghetti topped with chili bread crumbs, mushroom agnolotti with pumpkin purée, and hand-cut cocoa pappardelle with wild boar bolognese.

In addition to pasta, diners will find shareable entrées meant for two or three people, including pork chop Milanese, charcoal-grilled swordfish, grilled ribeye, and whole roasted lamb neck. A selection of crudos, breads, salads, and appetizers like crispy octopus and roasted meatballs will also be available.

Fans of pastry chef Brian Mercury’s baked goods at Café Beatrice will be happy to know that he’s putting his talents on display at Geppetto, too. For dessert, there will be modern renditions of Italian classics, alongside a rotating lineup of homemade gelato. Puritan Group beverage director David Danforth will tackle the drink list, featuring Italian wine, six signature cocktails on draft, an amaro cart, and affogato and amaro gelato options.

“This has been our passion project for about two years now,” Gilson shared in a press release, describing The Lexington’s three distinct concepts. “Our intention was to give our guests something for a part of every day to fit into their lives, and we believe we have delivered just that.”

Designed by RODE Architects, Geppetto is located on the first floor of The Lexington and features a 74-seat dining room. When it opens, the restaurant will offer dinner Tuesdays through Saturdays.
